Indonesian Crispy Corn Fritters


  • 2 1/2 cups of corn semi smashed
  • 3 large hot green chillies, seeded & chopped
  • 1/2 cup plain flour
  • 1/2 cup rice
  • 1/4 tsp baking powder
  • 2 tsp salt
  • 2 tsp coriander powder
  • 1tsp sugar
  • 1tsp asafoetida
  • 1/2 tsp chilli powder
  • some candle nuts or macadamia nuts (can be toasted)
  • 1/2 cup cold water
  • 1/2 cup chopped celery leaves and stalks
  • Rice bran oil for shallow frying


  1. Combine all dry ingredients in a bowl and mix
  2. Powder the nuts and add to bowl
  3. Add corn chilli and celery to bowl
  4. Add water and mix to a spoon-able batter (Not drippy or dry)
  5. Spoon out and flatten, fry for 3-4 min
